my husband made dinner tonight. what. a. keeper.
this caramel macchiato creamer is a m a z i n g. don't know why it took me so long to find it.
a delicious cup of coffee in an antique friendship mug (my mom has the other one *grin*)
fruit usually goes pretty fast in our house, but occasionally the bananas get old. SO glad I strayed from my usual chocolate peanut butter recipe and went with these....they're delicious.
Banana Scotch Muffins
2 ripe bananas, peeled and mashed.
1 egg, beaten
1/2 cup sugar
1/4 cup milk
2 TB oil
1 tsp vanilla
1 cup all purpose flour
1 cup quick cooking rolled oats
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/2 cup butterscotch chips (i added a few more) :)
Mix together mashed bananas, eg, sugar, milk, oil, & vanilla. In separate bowl, combine flour, oats, baking powder, baking soda, and salt. Stir banana mixture into dry ingredients with butterscotch chips until just blended. Spoon into well greased 2 1/2 inch muffin cups. Bake in 400 degree oven 12-15 minutes. Remove from pan.
